The following weapons are seen in this movie.

Mal's gun/Dressed up Taurus Model 85

Malcolm Reynold's (Nathan Fillion) signature pistol is a Taurus Model 85 revolver completely covered by a brass casting which makes it look like an semi-auto handgun.

Winchester Model 92 Mare's Leg

Zoe's signature weapon is a Winchester Model 92 carbine cut down to pistol length and mounted with a "scope" which appears to be an expended rifle casing, similar to the one popularized by Steve McQueen in Wanted: Dead or Alive.

Jayne's Custom 1911

Throughout the film, Jayne carries a 1911 like pistol with dressings to the front and rear of the slide to make it look more futuristic. For a scene, River stole it from Jane and held Mal at gun point while she searches for the planet Miranda.

H&K MP5K

Jayne Cobb's other main weapon is a dressed up H&K MP-5Kwith the front handgrip removed and LED lights added, carried on a chest harness. A similar example is used prominently by Kaylee in the final firefight. It also uses the old straight type magazine. Wash also held one when they were searching Miranda.

A pair of folded M1A1 Carbines are seen in the gun rack on the back of the "Mule" hovercraft at the beginning of the film.

During the payroll robbery scene, a bank clerk is briefly seen carrying a cut-down Swiss Vetterli M1869/71 rifle, identifiable by its spurred trigger guard.

Type 94 or Kyuuyon-Shiki Kenjuu

During the payroll robbery scene, a customer is seen producing a Japanese T-94 pistol before being sensed by River and disarmed by Zoe. The history behind this handgun is that it is one of the worst in the Japanese military during WWII. It is hard to tell from the screen that this is even a Type 94 at all.

Enfield No.2 Mk.I*

During the fight scene in the bar, a patron pulls a heavily-modified Enfield No.2 Mk.I revolver before being subdued by River, who takes it and aims it at Mal. It has the barrel cut back into the frame, a shortened grip, and a number of attachments to the front and rear of the frame.

Dressed up MP5SD

Dressed up MP5SDs are carried by several characters throughout the movie, most notably Jayne first scene in the bank job and remained his primary weapon for the rest of the film and also Simon during the final firefight. They have some kind of scope attachment which looks more like a flashlight. There's dressings on the front end of the barrel and on the fore end of the weapon. It like, Jayne's MP5k, also uses the straight type magazines.

Armalite AR-18

An AR-18 modified with a handguard and front sight similar to a MAT-49 submachine gun is carried by Mal at several points in the movie, most notably while searching the abandoned city on Miranda, and before the final firefight. It has some sort of scope attachment and the magazine has some kind of dressing maybe a magpull.

Dressed up bullpup AK-47

During the final firefight, Jayne carries a rather large rifle which appears to be built around an AK converted into bullpup configuration. An ACOG scope as well as a large number of parts are attached to disguise it, including what appears to be the water jacket from a Vickers machine gun.

Mateba

Wash's gun (from promotional photos) and used briefly by Zoe during the final battle is the Mateba auto-revolver with LEDs added. (This is according to the first guy who posted here. I haven't had any good shots of this or found the promotional photos of Wash holding this and it was Zoe who used it during the final fight. Not Jayne.)

Unknown Shotgun

During the search on Miranda and at the beginning of the final fight, Zoe used this shotgun, which had a scope mounted on it.
